The Waypoint Cafe


Is where we had lunch yesterday. Husband and I slept in (oops) and missed stake temple day (hey give us a break we went last Friday!) so we decided to head to Camarillo for the day.


Husband was a little disappointed in my shopping abilities yesterday... He said, "Get whatever you want!" Well... apparently nothing was screaming my name except a t-shirt, sweatpants, and a sweatshirt from the North Face (all 50% off thank you very much). Boo J Crew. Get some new stuff in please!

Well we spent most of the afternoon perusing shops, and then my belly started to grumble. We have a usual places that we like to eat when in Camarillo... but husband suggested we go..... To the Airport....


I was a little apprehensive (as you could imagine... has anyone EVER had good airport food???) But I was NOT disappointed! Turkey melt on garlic bread, juicy bleu cheese hamburger, fantastic parsley seasoned fries... and a to DIE FOR banana chocolate shake.


All while soaking up some sun, and watching planes fly in and out. It was AWESOME!


Husband decided that next time we go there... WE WILL FLY there and have our burgers :-) Because you literally land... and then walk into the restaurant.
(He's hott... I know)


So my friends... next time... any takers to come fly with me? :-)

Red Velvet Whoopie Pies....

Yup... you heard me right... red velvet... kinda just rolls off the tongue no?

I made these yesterday for our Sunday school kids (so you guys had better be angels!)

Things I learned this week...
#1. Don't laugh during your yearly exam
#2. Dentists should not use water picks that sound like drills in your mouth if you aren't numb and unaware of what they are doing...
#3. Always raid husband's closet (because... well... we can't share a whole one together) if you can't find something to wear or the right accessory.
#4. Tucking in your shirt makes you look like you have a muffin top even if you don't have one... Boo.
#5. I have to work way harder at maintaining my "figure" than MOST people do... thanks genetics
#6. Don't poke around food blogs when you are hungry... Its kinda like going to the grocery store hungry.
#7. That is weird to wash your hair and then go to the salon... because they wash it again... but it would be gross if you went and DIDN'T wash your hair
#8. My husband is the BEST... EVER (ok I already knew this but he reminds me everyday how LUCKY I am)

And I think its time to get a real job... I'm kinda goin' crazy over here

Awkward and Awesome!

Its Thursday my friends! How excited are we!?!?
Awkward:
-Forgetting your deodorant (even though hubby reminded you twice to bring it) and having to wear "old spice, swagger" to your graduation... does it smell like man in here?
-Having the housekeeping lady walk in on your in your underwear... THAT was fun
-Tripping on the stairs in your new yellow shoes before graduation. Boo.
-So my dad has these tumbling pigeons that he raises (yeah... um... its weird) and there was this pigeon at the Dodger game and dad said "Hey! There goes one of my birds" And my mom said "Come to Daddy!" Yeah.... they are pretty embarrassing. I don't think we will take them out in public anymore
-Laughing during your annual "female" exam... its sooo inappropriate... but I couldn't help myself
-Huggin' people you don't know... I'm all for sharing some love... but... still...
-Oh my gosh! This dude (Rob Marshall) on "So you think you can dance"... He was ORANGE and you could see his fake-n-bake lines on his hands... did anyone besides ME see that?


Awesome:
-My new hair cut! Thanks Shantelle! She is amazing. Go to Glassbox Salon in Pismo!
-Sewing lessons! I started today with Diane and she is amazing! And so talented! Check her out friends.
-Going to the temple with my hubs... nothin' beats thats
-When my mom kept reaching over husband at the Dodger game to touch my hair husband said "What are you Rapunzel?" and I started singing "Flower gleam and glow, let your power's shine...." (for those of you who have seen the movie Tangled) ... you should have seen the look on hubby's face... priceless

Meatloaf Schmeatloaf

Double Beatloaf... (I hate meatloaf)

K let me just preface this by saying if you DON'T LOVE meat loaf... you will like this... unless of course you are ME and you are freaked out by the fact that you just cooked a loaf of meat in your bread pan... if that doesn't weird you out... you will be JUST fine (really it was DELICIOUS I just couldn't get over the whole... LOAF... thing)

BBQ-Bacon Meat Loaf

You'll need:
Olive oil spray
1 cup chopped red onion
4 slices extra-lean turkey bacon, chopped (I used Jennie-O)
2/3 cup old-fashioned oats
1/2 cup fat-free milk
1 pound extra-lean ground chicken breast
2 large egg whites, lightly beaten
1 clove fresh garlic, minced
1 tsp worcestershire sauce (I could NOT put this in anything I made... anchovies??? um no thanks. I used BBQ sauce instead)
1/8 tsp salt
1/3 BBQ sauce (7g carbs or less per 2 tbsp... this is for the top when you bake it)

How it's done:
-Preheat oven to 350. Mist a 9''x5''x3'' nonstick loaf pan.
-Place a medium nonstick skillet over medium heat. Lightly mist pan with spray and add the onion and bacon. Cook, stirring, for 6 or 8 minutes (or until the onion is tender and bacon is chrisp) Remove from heat and allow to cool.
-Combine the oats and milk in a mixing bowl (stir to combine). Let the mixture stand for 3 minutes, or until the oats soften. Add the onion and bacon mixture, the chicken (or turkey), egg whites, garlic, Worcestershire sauce (if using), and salt. With a fork or CLEAN hands, mix until well combined.
-Transfer the mixture to the prepared pan and spread so the top is flat. Spread the BBQ sauce evenly over the top. Bake for 35-40 minutes or until it is completely cook through and no longer pink. Let loaf sit for 10 minutes before cutting into 8 slices to serve.

Makes 4 servings.

The damage (per serving):
258 calories, 35g protein, 20g carbs, 3 g fat (trace saturated), 76mg cholesterol, 2g fiber, 529mg sodium.

I think I am still tramautized by making this dish. The whole idea... gives me the heeby geeby's... plus husband keeps teasing me about it... It SMELT delicious and it TASTED delicious... I can just never eat it again. But if you like meatloaf you will love this. Husband sure did!

I grew up and... then... I worked for my parents...

Since I am "between jobs" and "school's out for the summer" my parents have commandeered me

(I am NOT in love with this pictures... in fact.. the more I look at it.. the more I dislike it... but I had to show you where I WAS all day don't worry I didn't wear sunglasses all day... I was just excited about those RAYBANS!). THAT my friends is the back back office at my parents (I say "back back" because my dad's office is technically the "back" office)

And today I helped my parents do THIS and THIS and THIS
and of course the optometrist's daughter forgot to wear her glasses...
my eyes were dying after staring at the comp. all day

But now that I am a "grown up" I have started to think more and more about my "big girl job"
I just didn't know it would be helping my parents in the
"Social Networking" department

At least I am being paid in lunches and sunglasses

Grilled Chicken Parmesan

Well friends- I had a request for more healthy recipes! Wish granted! Also, would anyone be interested in seeing/reading about my monthly meal planning? What I plan on making and grocery lists? Let me know because its almost time for my monthly trip!!!

Grilled Cicken Parmesan

You'll need:
4 (4 oz) chicken breasts (boneless, skinless)
Olive oil (I used a sprayer but DON'T use one that has propellant! We have one you can refill)
Salt, to taste
Ground black pepper, to taste
1/2 cup Marinara sauce, or other low-fat, low-sodium, low-sugar sauce
6 tbsp low-fat mozzarella
2 tsp reduced fat parmesan cheese

How to make it:
Preheat oven to 350. Preheat a grill to high heat (I used a George Forman). Light mist both sides of the chicken with olive oil and season with salt and pepper. Grill the chicken for 3-5 minutes per side or until it is no longer pink inside. Transfer to a baking dish (I lined my dish with reynolds wrap... easy clean up!) Heat the sauce on low in the microwave until warm (I did about 2 minutes) Top each breast with 2 tbsp marinara sauce, followed by 1 1/2 tbsp mozzarella and 1/2 tsp parmesan. Bake the chicken for 3-5 minutes in the over, just enough to melt the cheese. Makes 4 servings.

The damage (per seving):
169 calories, 29g protein, 5g carbs, 3g fat (less than 1 g saturated) 70 mg cholesterol, 1g fiber, 210 mg sodium.

This dish was SO QUICK and easy to do... and did I mention delicious? Husband was a fan... you KNOW its good when that man goes back for seconds.

My weekend... And... 7 months later...

I ended up wearing all 4 pairs of shoes that I took on our ONE DAY trip thank you very much (for those that are my buds on FB) We had a blast!

Mormon night at Dodger Stadium! The Dodger's lost (although it was really cool to see the National's hit a GRAND SLAM.) And the fireworks display was disappointing.


(how much do you love that we went to a baseball game and the majority of our pictures are of disgusting food? its all part of the experience...)


The next morning we went to Long Beach CA and...
I "walked"

Its a basic human skill I know... But the boy behind me kept assuring me that if I fell he would not be there to catch me. I made the mistake of telling him that I tripped on the hotel stairs earlier that morning... Classic.

Overall it was great and I am so glad that 7 months later I decided to "walk" at my graduation. I met some fantastic people (in the short 4 hours I was there) that continue to serve our country and I am so thankful that I was able to get my degree the way that I did.

 I am proud of the school I went to and I am so thankful that there are options for military members and their families to further their education (there were people getting their PHD's! sign me up!)
And I'm thankful of course to MY MAN for supporting me in all that I do

We celebrated by eating at The Cheesecake Factory...

The only thing that could have made it better would have been #1 If my sister's were there... AND #2 if we had gone to Disneyland (its my fav)

Akward and EXTRA Awesome

Today was the LAST day of summer school!!!!! Can you tell that I am excited?

Awkward:
-Having a this Navy recruiter trying to "recruit" me for this whole past week. "We are looking for people like YOU to join the Navy". Me "Uh... my husband is in the Air Force." Dude "SO!" Me "So... that's all the military I need in my life... thanks though"
-When my friend Geraldo told me that he got locked out of his apartment in his pajamas and slippers... and he was wearing WINNIE THE POOH slippers "I wasn't even wearing MANLY slippers!" he said.
-When my stats teacher said, "SOME of you don't have calculators that don't do these kinds of problems... like YOU for example (talking about me)... everyone look at her and make her feel really awkward!" Mission accomplished
-Missing spots when you shave... and then having your husband touch your legs... Um I think you missed a spot... Oops.
-Husband and I were watching TV and the news lady comes on and says "Right on target, shoppers in SLO gear up" and I said "Hey I think they are talking about the new Target!" Husband says "DUH!" another oops.
-There is a new show called "Whitney" thats coming on TV... and it bothers me (hey you can't blame me that I always wanted my own talk show called "whitney" I'm sure other people who are named "oprah" and "ellen" feel the same way)


Awesome:
-I got an A in chemistry!!!! (I also passed stats praise the Lord)
-Tomorrow we are going to a Dodger game! (whoot whoot mormon night!)
-I have my commencement ceremony on Saturday! (7 months later)
-My outfit I will be rockin' at graduation
-My mom is making breakfast for dinner tonight
-I WILL be eating ice cream in my very near future
-Whenever I say to husband "Honey we have been married for 2 years and 7 months today!" and he says "Thank goodness love!"
-I get to SLEEP IN tomorrow
-Tomorrow is Friday!


Sorry about the loft pictures (yes we have a baby gate for our dog). Husband isn't feeling wonderful so he was resting but wanted to still take my pictures "Thats cute!" He said of my outfit... and hopefully me ;-)

I have this thing for...

Products....

I love trying new things and finding out what I love and what I don't! Currently I am pretty happy with my bathroom products.... Lets review shall we?

Hair:
Enjoy Luxury shampoo and conditioner...
O. M. G. guys I am in LOVE with these products.
I tried WEN and HATED it (you know how I am with infomercials)
But I knew that I needed something sulfate free... QUE ENJOY!
All products SULFATE FREE! And my hair feels F.A.B.U.L.O.U.S (and looks that way too)

I also LOVE their hair mask
Because my Pocohontas locks are getting increasingly longer I use this baby once a week and it gives my hair a nice deep conditioning treatment

Body wash:
I have SUPER sensitive skin (as in I itch like a DOG if I am even slightly allergic to anything) and this is the only body wash that doesn't make me crazy (and its derm. recommended thank you very much)

Shaving cream:
I am in LOVE with this saving cream. Propellant FREE, you can shave wet OR dry, AND it has a PUMP... AND it won't RUST in your shower. Serious score my friends (I found mine at Target)

Lotion:
This lotion smells like summer to me! It also reminds me of my sister so apparently I have emotions attached to this smell as well. But seriously you know how you put on some smelly lotion and like 5 seconds later the smell is gone? Well that won't happen when you use THIS. Try it. You like it.

Welp thats it for today my friends I am off to study some more for finals! Wish me luck!

Ugh... sorry this post is kinda lame-o friends... I have finals in T-minus 2 days. Prayers and happy thoughts would be MUCH appreciated.

BYU-I

Having our party got me thinking A LOT about my college days (because they weren't too long ago) I LOVED college (most of the time)... minus the horrid roommate that spred lies about me... Its just so sad because we were all SUCH good friends until we had to be back-biting-hissy-cat-fit-girls. None-the-less I feel like I should share some of my do's and don'ts that I shared with my girls.



Do:

-Go on DATES! LOTS of them!

-Be friendly! But not “overly” friendly

-Serve your roommates

-Get your homework done BEFORE the weekend

-GO to the haunted mill AND the fear factory… and the haunted tunnel


-Be selective about your “second” dates

-Move all of your beds into the front room and have a “sleep over”
(this is a terrible picture but its the only one I have)


-Play in the snow


-Get your clean checks done EARLY
(this is NOT my room)


-Get your laundry done either first thing in the morning or when over people are at class... and keep an EYE on it!


-Play pranks on your FHE brothers



-Go to Sadie Hawkins!


Don't:
-Stay out past cerfew… nothing good happens after midnight anyway
-Just “get through” college
-Look like you’re going to prom everyday
-Wear heel in the winter… except on Sundays… and only if someone DRIVES you to church

-Gain the freshman 15… use the GYM its free!
-Skip class
-Wear jeans to class in the summer… its too hot! Wear dresses
-Skip guitars unplugged! It’s the most fun dance they have there (in my opinion)


-Go to Big Jud’s its gross!


-Miss stadium singing… even if you don’t like to sing

-Live too far away from campus during the winter… BAD IDEA!

-Forget to have FUN!

Dear BYU-I. Some people might not like you... but I loved you.

Dear old roommates... some of you I love and miss... but I am so glad that I am married and no longer have to live with a bunch of girls :-P
