I don't want to bore you...

With too many details of our weekend... but here is one thing we did...

We built (AKA Devin built and I helped) a work bench for the garage

And we had some leftover wood

And the BIGGEST marshmallow's I have EVER seen

Ladies be sure to marry an Eagle Scout (boyscout) because they know how to DO things... like make  fire

And the way I am dressed you would think its the winter... Nope... End of May. I SWORE that it was in the 40's this past weekend... HENCE the fire (which was my idea thank you very much)

Three things I learned from this...
1. Husband is the master at roasting marshmallows (along with other things of course)
2. I am the messiest s'mores eater EVER
3. Eating s'mores makes me EXTREMELY tired... as in... I got chills when I got into bed that night because I felt so tired... I think the fire and s'mores made me go in to "camping" mode.


And because I didn't take pictures of my cute church outfit this Sunday...

Food Confession

I love food.
Which is probably whyyyyyyyyy I really want pizza tonight... because as much as I LOOOOOOOOVE eating healthy... I love eating CERTAIN junk foods (I'm SORRY I just do k? Just call me human)

Junk food I LOVE

Cheetos:


I don't like flamin' ones, or puffy ones... just legit old school cheetos. They are SOOO disgusting I can't believe I am admiting that I like them... but alas- I do.

Junk food I DON'T love:

Hard candy.
Like these... lolly pops, lemon drops... anything like that... is sooo not my thing.

Ah... that felt good to get off my chest... Maybe we should do this more often?

Awkward and Awesome Thursday

Awkward:
-The time mom said that she fed the homeless man her left over fried chicken...and then never saw him again...
-When the lady at church mistakenly called me the PREGNANT girl... um... do I look impregnated?
-This past Tuesday when the patient cussed me out... that was super fun
-Shopping at buffalo exchange- those girls that work there just glare at me like I don't belong.
-Having not ONE but TWO dogs following you around everywhere... I ended up closing my door so I could get some alone time
-Eating super healthy all week and then CRAVING fries, cheezits, CHOCOLATE and then recognizing that its the week before your period... boo :-(
-Hearing your voice on the radio... do I really sound like that?
-When the patient today told me that she had a disfunctional sphincter of oddi...??? I had to google it.

Awesome:
-Three day weekend coming up
-Hubby said we could have pizza for dinner tomorrow (and NOT the home made kind! AKA I don't have to cook and we can be bad eaters hehe)
-I WON tickets to the Monterey Bay aquarium for next weekend on the radio :-) And hubby said we could go! And that was one of our very first adventures together :-)
-I get to go have lunch with my bro-ski tomorrow!!!
-My biggest loser cookbook... AMAZING (hubby even went back for THIRDS last night)
-Insanity is making my huuuuusband look soooooooooo good ;-) WOOHOO!
-Tomorrow is Friday!
-This cute commercial


Anyway hope you guys have a fantastic Thursday! I just painted my toes this amazing shade of pinky/organge... perfect for summer! And... I quit my job to go to school full time for PA school pre-reqs... And I just might need to take a vote as to what to wear on my first day. K. Love you. Bye.

Three Cheese Spinach Lasagna

This was my first experience making Lasagna and it takes A LOT longer to make than I thought... but totally worth it!!!!!!!

You'll need:
-1 tsp EVOO
-14 dry whole wheat lasagna noodles
-1 package frozed chopped spinach, thawed
-3 cups all-natural fat-free ricotta cheese, drained of any liquid
-3 large egg whites
-1/4 cup freshly grated Parmesan cheese
-2 tbsp finely chopped parsley leaves
-1 tsp garlic powder
-Sea salt, to taste
-Ground black peppr, to taste
-2 1/2 cups all-natural, low-fat, low-salt, no-sugar-added marinara sauce
-4 oz. finely shredded almond mozzarella cheese (BL suggests Lisanatti's)

How to make it:
-Preheat over to 350. Bring large pot of salted walter to a boil.
-Add the olive oil to the pot. Add the noodles and cook, stirring, for 8-10 minutes or until al dente. Drain well. Cut or tear 2 noodles in half widthwise.
-Meanwhile, drain the spinach WELL by squeezing it in a clean, lint-free dish towel until all of the excess moisture is removed. Once you think all of the moisture is removed, contiune squeezing the spinach even more to ensure it is completely dry. In a medium bowl, stir together the ricotta, egg whites, 3 tbsp Parmesan, parsley, and garlic powder until well combined. Stir in the drained spinach until well combined. Season with salt and pepper.
-To assemble the lasagna, spread 1/2 cup of the marinara sauce evenly over the bottom of a 9'' x 13'' glass or cermic baking dish. Lay 3 1/2 noodles evenly across the bottom of the dish in a single layer. Dollop one-third of the ricotta mixture in big spoonfuls across the noodle layer and (use a spatula) spread it into an even layer. Top the ricotta with 1/2 cup of the  remainint sauce. Sprinkle one-quarter of the mozzarella evenly over the sauce. Repeat layering process (noodles, ricotta, sauce, mozzarella) two more times. For the final layer, top the lasagna with the last of the noodles. Spread the remaining sauce evenly over the noodles. Sprinkle with the remaining mozzarella, then the remaining Parmesan.




-Cover the dish with foil and bake for 30 minutes. Uncover, and bake for 5-10 minutes longer or until cheese is elted and lasagna is hot throughout. Allow to cool for 5 minutes. Cut into 8 squares and serve.


The damage: 257 calories, 22 g protein, 34 g carbs (6 g sugar), 4 g fat < 1 g saturated, 3 mg cholesterol, 7 g fiber, 353 mg sodium.


This is suuuuuuuuuuper delicious! I even think it tastes BETTER the next day! I cut mine into 9 pieces and they are HUGE... I froze half of what it made and Dev and I still had enough for lunch the next day... TRY IT!!!

Sausage & Pepper Goat Cheese Pizza

Oh my gosh you guys this PIZZA is AMAZINGGGGGGG! Seriously. I had reservations about goat cheese... because... um... well... its from a goat... but its DELICOUS!

You'll need:
-12 oz. extra-lean ground turkey (BL suggests Jennie-O)
-2 tsp fennel seeds (I did NOT use these I think they are gross)
-2 tsp dried parsley
-1/2 tsp crushed red pepper flakes (more to taste if you want)
-1 tsp Italian seasoning
-1/2 tsp garlic powder
-Olive oil spray (propellant free)
-1 cup thin, 1 1/2 -long green bell peppr strips
-16 oz. all-natural, low fat whole wheat pizza dough
-1 cup all-natural low-far, low-salt, no-sugar-added marinara sauce (BL suggests Monte Bene Tomato Basil Pasta Sauce)
-2 oz. crumbled goat cheese (1/2 cup)

How to make it:
-Place an oven rack in the bottom position. Preheat oven to 450 degrees
-In medium bowl, mix the turkey, fennel, parsley, pepper flakes, Italian seasoning, and garlic powder until well combined. Set aside.
-Lightly mist a medium nonstick skillet with spray. Place it over medium heat. Add the peppers and cook (stirring) for 4-6 minutes (or until tender). Remove the pepper from the pan and set them aside. Mist the pan again with spray, turn the heat to medium high,  and add turkey. Cook the turkey, breaking into bite-size chunks (no crumbling!) for 4-6 minutes of until no longer pink.
-Press out dough into a 14'' nonstick pizza pan (don't add oil or flour or anything else to pan!) don't create holes. Spread marinara sauce evenly over all but the outer 1/2'' diameter. Sprinkle half of the pepper, half of the turkey mixture, then the remaining peppers and the remaining turkey mixture evenly over sauce. Sprinkle cheese over the top. Bake for 11-15 minutes of until the crust is crispy and cheese is melted. Allow pizza to cool about 5 minutes. Cut into 8 slices.

The damage: 421 calories (2 slices), 33 g protein, 53 g carbs (3 g sugar), 8 g fat, 2 g saturated fat, 40 mg cholesterol, 8 g fiber, 677 mg sodium.

I would make this AGAIN for sure! Devin loved it too! MAKE IT!!!

Devin's B-day Weekend!

Woohoo my hubby had a birthday! I was SUPER excited to be HOME for this birthday! Last year we were in Colorado for some "gaurdian challenge" thingy and I didn't see Dev until like 11pm on his birthday :-( No fun! This year we both had to go to work but I tried to make sure that he started it off the right way....

I woke up at 5am (my usual time for Friday's) and I made my birthday boy a little breakfast in bed :-) These little babies are chocolate hazelnut stuffed french toast! Find the recipe HERE

And instead of hot chocolate I made him a cup of hot vanilla malted. Recipe found HERE It was so yummy! And a nice break from our usual hot chocolate!

I woke hubby up about 10 mintues before his usual time and he was NOT happy that I woke him up.... THEN he was worried that I was late for work... THEN he realized that I had made him breakfast in bed :-) Priceless...

His present? FLYING TIME! He was soo happy! That night after he got home from work we went and ate at Burrito Loco (birthday boy request), saw the new Pirates movie, and had birthday cake!!! (Cold stone red velvet)


Then yesterday we got to go to the temple :-) It was such a fantastic morning... words cannot express how thankful I am that we were there yesterday...

Then we went SHOPPING (haha duh right?) The traffic was terrible! But we still had fun! Hubby got a snazzy watch at Barney's that was orig. $300 and he got it for $11... steal!

And... JCrew was having a 40% off sale... I couldn't really help myself...

Church was gooooooooooood... Dinner was goooooooooooood... don't want to go to wooooooooork tomorrow :-(

Awkward and Awesome!

Awkward:
-This lady today asked me if the Nurse Practioner's 9 year old son was MINE!?!?!? Um... do I LOOK old enough to be his mother??? Um... no...
-If anyone were to see us doing the crazy insanity moves...
-Going to the church building last night AFTER an insanity workout (and after a shower thank you very much) without makeup on and seeing the kids I teach at church... I could just hear them thinking "Oooo what happened to you?"
-Wandering around the grocery store (especially a store you haven't been to before) looking for something and there is NO one around to help you but all the other customers look at you like "Is this your first time to a grocery store?"
-When I found out one of my favorite blog authors is pregnant and I exclaimed to Devin "THE DAYBOOK IS PREGNANT!!!!!!!!!!!" And he said "Um, doesn't she have a name?" And I said "Uh............ Yes HER name is Sydney... but her husband AND her make up the daybook and his name is Tyson... so Sydney+Tyson=Daybook and they are BOTH having a baby"...
-That the world is supposed to end on Saturday at 6pm??????

Awesome:
-Its hubby's BIRTHDAY TOMORROW!!!
-Going to see Pirate's 4 tomorrow!
-Tomorrow is Friday!
-Getting to go to the temple on Saturday
-Getting flowers from our boss today :-)

Biggest Loser Bon-Bon Chicken

Gosh this recipe was YUMMY!!! Honestly I HATE cucumbers but I would TOTALLY eat them again with this recipe. Hubby and I ate it right after our Isanity workout an dlet me tell you it HIT the spot. Perfect for a hot summer evening... even though tonight was cold ;-)

You'll need:
-2 cups all-natural low-sodium chicken broth
-1/2 pound trimmed boneless, skinless chicken breasts
-1/2 medium cucumber, seeded and cut into very thin strips about 2'' long
-1 whole scallion, trimmed and minced
-1/2 tsp toastd sesame seeds

Sauce:
-1 tbsp all-naural lower-sodium soy sauce
-2 tsp coconut sugar (I got this at New Frontiers)
-1/2 tsp chili-infused extra-virgin olive oil
-1/2 salt-free Szechwan seasoning (I used the one from the Spice Hunter and its the same one they use in the book I got it from New Frontiers)
-1 1/2 tbsp all-natural creamy peanut butter (I used skippy natural)
-1 tbsp rice vinegar

How to make the chicken:
-Ok so the biggest loser cookbook suggests boiling the chicken in the chicken broth for 6-8 minutes (or poaching as they call it) draining the liquid and refrigerateing it and then shredding it. I put my chicken in the crockpot with the chicken broth and 1 cup water- set it on low, shredded the chicken and put it in the fridge while we worked out and I think it was MUCH easier.

How to make the sauce:
-In a small bowl, mix the soy sauce and sugar. Add the oil and seasoning and mix until well combined. Whisk in the peanut butter until smooth. Whisk in the vinegar until smooth. (The whisking is SUPER important don't skip!) You can refrigerate for up to 5 days.

After that:
-Mound the chicken shreds in the center and sprinkle the cucumber evenly around the chicken. Pour the sauce over chicken. Top with scallions and sesame seeds.

(I really must be excused for my crazy workout hair and... well... forgive me but this was POST Insanity workout...)

Dish damage: 254 calories, 31 g protein, 10 g carbs (5 g sugar), 9 g fat, 1 g saturated, 66 mg cholesterol, 2 g fiber, 338 mg sodium

Sauce damage: 109 calories, 3 g protein, 8 g carbs (4g sugar), 7 g saturated, 0 cholesterol, 1 g fiber, 256 mg sodium.



Serioulsy... make this dish... it was bomb. Thanks Biggest Loser. Love you even more.

Orzo Antipasto Salad

When I saw this cookbook I HAD to have it... Like little kid kicking and screaming and making a huge scene in the store HAD TO have it (only without the kicking and screaming). Its the Biggest Loser flavors of the world cookbook... This was first on my list...



You'll need:
-6 oz. dry whole wheat orzo pasta (about 1 "scant" cup)
-3 oz. nitrate-free turkey salami, cut into 1/4'' strips
-3 oz. nitrate-free turkey ham steak, cut into 1/4'' strips
-1 1/2 cups chopped fresh spinach
-1 cup seeded and chopped tomatoes
-1/2 cup roasted red bell pepper strips (homemade, not soaking in brine or containing preservatives)
-1/3 cup zucchini matchsticks
-2 tbsp drained canned sliced black olives
-2 tbsp fresh basil sliver, or more to taste
-2 tbsp red wine vinegar, or more to taste
-2 tbsp freshly grated all-natural Parmesan or Romano cheese
-2 tsp fresh minced garlic
-1/2 bsp extra-virgin olive oil (or EVOO for you Rachel Ray fans)
-Ground black pepper
-Crushed red pepper flackes to taste (optional)

How to make it:
-Cook the orzo according to package instructions omit any butter or oil. When cooked, transfer it to a strainer and run it under cold water. Drain well.
-In a medium bowl, combine pasta, salami, ham, spinach, tomaoes, bell pepper, zucchini, olives, and basil. Mix until combined. Add vinegar, cheese, garlic and oil. Mix. Season with pepper and pepper flakes (if desired). Serve immediately or refrigerate for up to 3 days.

Makes 4, 1 3/4 cup servings

The damage: 260 calories, 14 g protein, 38 g carbs (4 g sugar), 6 g fat, 1 g saturated fat, 31 mg cholesterol, 6 g fiber, 407 mg sodium.

What I did differently:
I used chicken instead of the turkey salami and ham and I omitted the olives because I think they are gross. I also used roma tomatoes because I think they taste better :-)



This was my first time EVER roasting a pepper! So for those of you who are/were like me and don't know how to roast one here is how you do it.



Fire up the broiler! Place bell pepper on broiling pan. Now I had to keep checking back on my pepper so I'm not sure how long it needed to cook but the skin needs to get BLACK!!! Also you need to rotate it onto all sides so they all get black. You have to keep an eye on it a lot (or atleast I did because I didn't want ot mess it up haha) but once all sides are black, wrap pepper in tin foil. Keep it in the tin foil for about 15 minutes (it will still continue to cook)... after that you are ready to take the skin off!!!

This recipe was fabulous! I made it Sunday night so Devin and I would have some pre-made lunches that we could just grab from the fridge before work. I highly recommend this recipe and I think hubby liked it too :-)

The first day in weeks that I wore my hair down

Was today at church. I didn't take a hair dryer, curling iron, or any other hair do-ing related products to Hawaii with me... other than a brush :-)


Needless to say I am NOT excited about returning to work tomorrow :-( Boo. I am also NOT excited for hubby to go back to work. Its been nice having him around all the time... 'cause I love him long time.


Did you know that I now have a new baby nephew? Yup! My schmister had a little baby boy on Royal Wedding day which made it EXTRA fun. His name is Deacon and I love him already. Almost makes me want to have a baby... ALMOST...


Husband and I have started doing the "Insanity" workouts. Ever heard of them? MUCH less creepy than the P90X dude. We have done 2 workouts so far and loving it! Check em' out HERE

I also bought the NEW Biggest Loser cook book! I made my first recipe tonight... and so far I am a fan! (recipe to come tomorrow... or soon... or whenever I have time)


Um and how much are we loving that summer time is here??? Even though it rained for days in Hawaii we wore our bathing suits and sandals everyday... and our floppy touristy hats.

Also... you can imagine how excited I was to see this lovely thing hanging waiting for me this morning :-)

Awkward and Awesome!!! I'm back!!!!!!!

HELLO my lovely's (or do you spell it lovelies??? You KNOW what I mean right?)!!!!!!!!! Have you MISSSSSSSSSED me? (nod and smile friends) K cool I missed you too! BOO for blogger for messing up my usual Thursday Awkward and Awesome's but fear not my friends.....


Awkward:
-When hubby and I went to bed bath and beyond yesterday and there was this run away cart and I sprinted to catch it before it hit something and I yelled in victory "I SAVED US ALL!"....
-That time over Thanksgiving break were hubby, mum, sister and I went to see HP and the deathly hallows P1 and we were the first people in the theatre and we were CONVINCED that it was in 3D so we asked the ticket lady for the glasses and she looked at us weird but gave them to us anyway and we took pictures and posed in them and everything and then when the movie started it took all of us about 10 mintues to realize that the movie was NOT in 3D.... Hubsand looked around and had to inform us that no one else had 3D glasses...(and yes that was the LONGEST run-on sentence ever haha)
-The chick at Shark's Cove in Hawaii who totally stripped down and changed out of her underwear and into her bathing suit right on the beach... classy.
-Going back to work after being gone for 2 weeks (boo hoo)
-When we went to dinner at this one resturaunt in Hawaii and I told the waiter that I wanted the Ahi salad and he said "no you don't!" and I had to keep assuring him that YES I DO want the salad.
-That time that wave made me crash into the rocks in Hawaii and I hit my elbow and I swore I had a huge bruise and gash... and I didn't.
-The fact that I went to Hawaii and I don't have a tan... you can just SEE the looks on people's faces when we tell them thats where we went. #1 it was raining the MAJORITY of the time we were there and #2 I wear SPF because I don't want to get cancer... duh.
-When Devin and I were walking back to our hotel in Waikiki and there were these (a-hem) hoochie girls with this stumbling drunk guy and he kept muttering "ATM, ATM, ATM" and one of the girls screams "There go one ba-bay!"
-That I got a blister (gross) the first day we were there from my flip flop... and I ended up HAVING (seriously it was not by choice) to buy crocs... atleast they weren't these little babies....



... uh... yeah... The End.

Awesome:
-How stinkin' cute/sweet/amazing my man is... seriously I can't get enough of him... he is currently building a work bench with his own bare hands (old spice comercial anyone?)
-Hubs and I started the INSANITY workouts yesterday
-Our vacation... seriously even though I got sick... it was fantastic
-The Marc Jacobs sweatshirt that was orig. $250 that I got for $40... boo-ya
-When I put on my new shabby apple dress and hubby said "Wow, love, you look AMAZING!"
-The biggest loser cook book I bought! The rest of the month is filled with BL recipes! If they are good I will share :-)
-That its Friday and that is the only day I worked this week
-The lunch hubby and I had at Sally Loo's today in SLO... if you haven't been there GO and get the Sir Thomas turkey because its amazing and all natural 
-And this picture of our huge tourist hats....
