Conference weekend/ monkey bread muffins

This weekend Lucy had 3 shots! We went to new frontiers and I wanted to buy everything. I mowed the lawn. We snuggled. And watched conference.
We take this time to stay in our jammies

I spent a good amount of time in the kitchen making these little babies.

Cinnamon bubble buns (or monkey bread muffins):

You'll need~
For the dough:
-1 package active dry yeast
-1/4 cup warm water
-3 tbsp unsalted butter, melted
-2/3 cup sour cream
-3 tbsp sugar
-1 large egg
-1 tsp vanilla extract
-2 1/2 cups flour, more for kneading
-1/2 tsp salt
-1/4 tsp baking soda

For the cinnamn-sugar coating:
-1/3 cup packed light brown sugar
-1 tsp cinnamon
-3 tbsp unsalted butter, melted

For the vanilla glaze:
-1 1/4 cups confectioner's sugar
-1 tbsp unsalted butter, melted
-1 tbsp milk
- 1 tsp vanilla

Step 1:
Start by making the dough. In a large mixing bown, sprinkle the yeast over the water and let it stand until bubbly, 5-10 minutes. Stir in the butter, s cream, sugar, egg, and vanilla. Beat in the 2 cups of flour, salt and baking soda until well mixed. Add the remaining 1/2 cup flour and continue mixing until dough is smooth.

Step 2:
Turn the dough out onto the lightly flour surface and knead it until smooth (about 3 minutes). As you work, add more flour if the dough is sticky. Place the dough back in the mixing bowl and cover with plastic wrap. Let the dough rise for 1 hour.

Step 3:
Lightly coat a 12 cup muffin pan with nonstick spar then flour the cups and tap out the excess.

Step 4:
In a small bowl, blend the sugar and cinnamon for the coating. Place the melted butter in a small, shallow dish.

Step 5:
Gently punch down the dough to deflate it. Form it into a long cylinder and divide into 12 equal portions.

Step 6:
Using kitchen scissors divide each portion into 6 equal pieces, then roll each piece into a ball.

Step 7:
To make a bun, coat 6 calls with melted butter, then roll them in the cinnamon-sugar mixture. Arrange 5 of the balls in the bottom of the muffin cup. Create a small well in the center and add the 6th ball. Repeat with the remaining dough. loosely cover the buns with plastic wrap and let them rise until their puffy (about 40 mintues). Heat the oven to 350.

Step 8:
Bake the buns on the center rack until golden. 20-22 minutes. Let cool for 5-8 minutes. Place buns on a cooling rack.

Step 9:
In a small bowl, combine the ingredients for the glaze. Stir until smooth. If its too thick add some water until you reach desired consistency. Brush each bun with the glaze. Serve!

I also made a healthy version! Here are the substitutions I used.
Butter= applesauce
Sugar= honey
Sour cream= greek yogurt
brown sugar= agave nectar

I used all the same measurements except for the cinnamon-sugar coating I combined cinnamon and applesauce and agave nectar. For the glaze I used honey, agave nectar, and vanilla. I think they turned out fabulous!!! Devin liked them too... they did take a LONG time to make. Around 2 1/2 hours. Hubby said next time grands cinnamon rolls will be just fine haha.

                            And be prepared to use lots of dishes! Just sayin'
