Awkward and Awesome!

Awkward:
-The above Taylor Swift commercial. WAIT until you see the LEAP!
-The lady that come in to work today that smelt like the bread isle of the grocery store.
-The guy at work telling me that he thought my headband was actually purple HAIR. Sheesh dude have you NEVER heard of accessorizing????
-When Brandee answered the phone, "San Luis Internal Amy" HAHA... guess you had to be there.
-That Dev's parents seem to think I never cook. He must just talk to them on the nights that he actually DOES cook.
-When Devin decided to do Jillian's 6 week 6 pack with me and he said,"If your abs end up looking like her's at the end of this, I expect to have a ferrari AND beach front property." Me: "Uh... so you're saying you want my abs to look like her's so you  can have a ferrari?" Dev. "No way! Her's looks like a man's!" Guess he is gunning for that lamborghini.
-When girls wear too much bronzer (if you think this might be YOU please look in the mirror. Your cheeks should not be an unnatural burnt orange)... or girls who wear too much make up period... Like this chick....



Awesome:
-Unwrapped on the Food Network. This show makes me NEVER want to eat processed food.
-Not having to teach Sunday school this week. I will be atempting to make these "monkey bread muffins" for conference this weekend (obviously I did not find this in cook this not that). If they turn out well I will be posting the recipe.
-My shabby apple dress is on the way! I showed my mom and she said, "Nautical is VERY in!"
-Week 2 of Jillian's 6 week 6 pack!!!
-The nice weather we are having right now.
-That Jamba is now making fruit AND veggie smoothies... Doesn't that just seem like a duh?
-Vacation is getting closer!!!
-As always tomorrow is FRIDAY!!!!

Blog block

Sigh... this week I have been thinking of doing away with my blog. I see all these other super fun blogs out there and they have like a million followers... and I don't obviously.  Is my blog not fun enough? Maybe. I am feeling blogging discouraged. I can't blog about what I wear everyday because you would REALLY get bored of seeing my scrubs everyday even though thats what I would LIKE to be blogging about. Pitty Party. I guess we can call this "Whitney, and the terrible, horrible, no good, very bad blog." I think I will move to Australia.

 I just made my first Roman Holiday purchase. After weeks (okay only 10 days) of entering contests to win them (which obviously I didn't) and looking at them every night... this little baby is wingin' its way to me :-D

                      Lets just hope that I love it as much on me as I do on her!!!

Sunny, with a chance of bows

It did not rain today!!! After a week of almost solid rain, today was gorgeous.

This weekend has been super nice to just relax and love on my honey. Friday night we went and had dinner with our friends Shawna and Garrett. We had such a blast going on a walk, eating amazing food, and playing games. If Shawna starts a blog (HOPEFULLY SHE WILL!) You MUST follow her K? K :-D.


The yesterday we went and helped a boy in our ward with his eagle project. He held a bicycle safety course. We tooks our bikes and were prepared to show the little kids how it was done... until we saw the course... the bikes stayed in the truck haha. A local mother who lost her son while he was bike riding spoke. Find her husband's cross country bike ride HERE and support the cause of eliminating distracted driving.


And then for dinner we had the ever classy soup and grilled cheese. For dessert I made Shawna's "apple chrisp". It wasn't as good as hers but it was still fantastic! Maybe the apple chrisp recipe could be her first POST!?!?!?


Then my cute husband and I watched The Princess and the Frog! I giggled the whole time while this handsome man cuddle me :-) Today we went to church and the building smelt like rotten fish (GROSS!!!!) and Dev kept saying that one of the older ladies there looked like Barbara Bush... thanks for keeping me reverent love.
And how much are we loving my bun today? K well I am LOVIN' it because it was EASY! Just pony-tease-twist-pin-GO!

It's raining, it's pouring...

And I have conflicting fashion wants (ok NEEDS) right now. In lieu the rain, I am OBSESSING over these....
Are these not super fantastic!?!?!? I tried these on over Christmas and I have yet to purchase them because they will put a big DENT in my pocket book. A whaping $316 dent. BUT they are soft like butter and utterly fabulous AND they fit over my gigantic calves.

ALSO wanting these little beauties... Devin said  should have bought them in December...


Yes they are PINK and YES they are wellies. And I love them ok? These little babies are a litte more affordable at $125. They come in other colors friends don't be scared :-)

When I should be thinking of BEACHY things such a sandals, espadrilles, swimwear etc... I am thinking about covering up my pedicure and truding in the rain.

Cook this! Not that! Pulled Pork Sandwich

My mom is a Southern Belle. She is a fabulous cook. Sunday she made fried chicken and it was disgustingly amazing. Ahhh North Carolina how I miss you. One food that is SUPER southern is bbq. So when I saw this recipe for pulled pork I decided to try it!!! This was my first time EVER cooking pork. I am not a big pork fan (with the exception of bacon duh). I also made cole slaw to go with it.

Pulled Pork~
You'll need:
1 bonless pork shoulder (4-5 lbs)
Salt and pepper to taste
1/2 tbsp canola or veggie oil
1 cup apple cider vinegar
4 cups (2 cans) low-sodium chicken broth
1/2 tbsp liquid smoke (I had a hard time finding this but it should be next to the BBQ sauce)
4 hamburger buns



Cole Slaw~
You'll need:
2 tbsp dijon mustard
2 tbsp mayonnaise (I NEVER use mayo on ANYTHING but I bought the olive oil kind)
2 tbsp red wine vinegar or apple cider vinegar
2 tbsp canola oil
salt and pepper to taste
1/2 head green cabbage, thinly sliced
1/2 head red cabbage, thinly sliced
3 carrots, cut into thin strips
1 tsp fennel seeds (I will NEVER use these again, they taste like black licorice. Dislike!)
Pickled Jalapenos (optional... we did not use these)



Pulled pork~
How to make it:
-Heat a large skillet over medium-high heat. Cut pork into 2 or 3 pieces and season with salt and pepper. Add the oil to the pan. When the oil is hot, sear the pork until thoroughly browned on the outside. Remove the pork and place in the slow cooker.
-Add the vinegar to the hot pan and deglaze, scraping any pits of browned meat stuck to the bottom (this sounds really gross but I think it helps). Pour vinegar over the pork and add the broth and liquid smoke to the slow cooker. Set the slow cooker to high and cook for 4 hours until the pork falls apart with gentle pressure. Remove pork from liquid and shred. Toss with a bit more vinegar and serve on top of warm buns.

Cole Slaw~
How to make it:
-Mix the mustard, mayo and vinegar in a bowl. Slowly whisk in the oil. Season with salt and pepper.
-Combine the cabbages, carrots, fennel seeds, jalapenos (if using), and dressing in a large bowl. Toss so that everything is evenly coated and season with more salt and pepper.

Suggestions:
-I added Santa Maria (AKA Susie Q) seasoning to the pork before cooking. I also set the slow cooker on low and cooked it for 8 hours. I also didn't think there was enough flavor to the pork after I shredded it so I mixed about 1 tbsp vinegar with about 2 tbsp BBQ sauce and poured it over the sandwiches and it MADE THEM SUPER DELICIOUS! I highly recommend doing it!

-Don't use fennel seeds unless you love them and you love black licorice. Other than that this meal was fantastic!!!!

Damage: Sandwich, 430 calories, 18g fat (5g saturated), 540 mg sodium. Cole Slaw, 130 calories, 8g fat (1g saturated), 200 mg sodium.

Awkward and Awesome!

Awkward:
-The brand new mercedes I saw driving the other day with the license plate "Humlity" (yes I KNOW its spelt wrong but thats how it was spelt) REALLY mercedes driver?
-"The new girl" (haha) at work telling us "You guys talk a lot about food here don't you?" B said, "Yeah you can tell none of us here have eating disorders"
-When Devin told me that I HAD to buy new sports bra's because my other ones were "unacceptable" and then he proceeds to try and throw them away and I scream "NOOOO!" like its the most precious piece of clothing. Security blanket? Maybe. Necessity? Totally.
-Everyone busting out their cool smart phones while I am still using one that looks like the Nokia brick I used to have.

Awesome:
-Perfect couples is on tonight! And the Office hahahaha!
-Vacation is only a few weeks away
-I don't have to teach sunday school next week- those kids will be the death of me
-Devin said tonight, "Love have you bought your shabby apple dresses yet?" Gosh the man knows me!
-Going to the snow again (hopefully!) soon!
-I didn't have to cook tonight
-Been doing 2-a-day workouts this week. Jillian Michaels has been kicking my abs into shape.

I'm dreamin' of a Saturday mornin'

I wish that tomorrow was Saturday... I actually wish this everyday BUT I am especially in the mood for some fantastic breakfast food. For my b-day my parents got me gift certificates to Kay's Country Kitchen it Orcutt.

Last Saturday Hubby, Moms, and I went to Kay's for brunch. Doesn't brunch sound oh so sophisticated?

When in Rome

Le Sigh. Haha I love that expression. My friend Kara used it the other day and I have decided to use it as well. What, might you ask, merit a "le sigh" on the only day this week it isn't raining?

I have been LUSTING over the new Rome Colletion (amongst other dresses)  at Shabby Apple since I pre-viewed it last Thursday. (I have yet to decide which one to get hence the le sigh friends)

Giggles on a Monday

Since Thursday seems so far away right now...I am telling you 3 days early that you really should turn on the TV this day (unless you have strong moral objectives to it) Because its one of my favorite days to watch the telly lately. Why you ask?

Getting packages in the mail...

Is like Christmas to me. Even though I KNOW what I ordered it is still super exciting. So Friday after I went shopping with my madre, there was a big-brown-box waiting for me by the door. I squealed, clapped my hands, and invited my mom to come in and open it with me. Guess where this package was from!?!?!?

Eeek! I decided that ordering online is a lot safer (AKA cheaper for me) than going in to the store. I bought....


The Sephora paddle brush. I desperately needed a new brush! My hair is getting longer (I have decided not to chop it off just yet) and it get tangled easily. I read review after review and I still wasn't prepared to spend that kind of money on a brush... until I was in the locker room at the gym and guess who busts out this very same brush I had been lusting after? Yup, my friend Brandee. She raved about it and I was sold. $29 for a brush and worth every penny. Seriously. A+


I also bought these 2 nail polishes. The gold one is a top coat. I have gotten so many compliments on my nails (even from MEN! GASP!) Its like a party on your nails. The pink one is called "wardrobe change" and it is so fabulously ballet pink I can't get over it. $9.50. A+


Husband was begging me to get a new one of these. Obviously, I needed a new one. This is the Sephora brand eyelash curler and honestly its the best one I have used. $16 + 3 replacement pads (steal). It is the best! Devin tried it too (SHHHHH!) and he liked it as well. A+


This is the best hand lotion I have used. Ever. I have been using this lotion since I was about 12. My hands tend to get VERY dry and this little baby does the trick. I got a 3 oz bottle and a 1oz bottle for $22. A++

Awkward and Awesome!!!

Hello my friends! Ready for some awkwards and awesomes? I thought you were :-) Because you wait all week for them right? (Nod and smile friends nod and smile)

Awkward:
-People wearing dresses and tuxedo's skiing.
-Me staring at a guy wearing a suit and a snow board. He says, "You're pretty!" I say, "Um, thanks, I like your suit" guy "I like your eyes!" me "Thanks! See ya!" Where was my opertune moment to take off my glove and flash my wedding ring?
-Texting my friends at 5am telling them there is a Tsnami on the way when they already knew. GOOD MORNING!
- Eating it in front of my snow boarding instructor... Nice one Whit.
-Seeing ex-boyfriends around town. Can't wait to move so this doesn't happen as often.
-When I wrote Devin an email the other day and it said, "I can't wait to but on you when I get home".... he wrote back, "you can't wait to but on me!?" opps. I meant LOVE. Stupid multitasking.
-Devin's face in this picture.... K maybe my face too. Yes we go to Disneyland a lot.



Awesome:
-I ZESTED for the first time this week. I am a believer.
-My order from Sephora should be here tomorrow! EEEK I'm excited.
-We are going to breakfast at Kay's Country Kitchen on Saturday.
-Tomorrow is Em's b-day dinner!!!!
-The book "The Help". Read it.
-Shabby Apple's new Roman Holiday collection. I plan on spending lots of money in the near future.
-Extreme couponing.
-My husband.
-Tomorrow is FRIDAY!

                  And our dog thinks every pillow in the house belongs to her.

Cook This! Not That! Fajitas

GUYS! It has been SO long since I have posted a cook this! not that! post! I have been makng banana nutell crepes (FAV!) and I also made this "loaded alfredo" thing last week from there but honestly you guys would NOT want to try it. It. Was. Gross. Never making it again.

Tonight I made fajitas. Now... this is part cook this not that and part Giada De Laurentiis.



Cook this! Not that! Marinade Version. (I did not use this version)
You'll need:
1/2 cup orange juice
2 tbsp chopped chipotle pepper
Juice of 1 lime
1 tsp ground cumin
Salt and pepper to taste
1 lb boneless skinless chicken breasts


Giada version. (the one I DID use)
You'll need:
1/2 cup OJ
1/4 cup EVOO (extra-virgin olive oil for those who don't watch Rachel Ray)
2 large limes, zested and juiced
1/4 cup agave nectar or 3 tbsp brown sugar (I used the sugar)
3 cloves garlic, minced
1 tbsp dried oregano
1 tbsp chili powder
1/2 tsp kosher salt, plus extra for seasoning (I used sea salt)
2 boneleess skinless chicken thighs (we used breasts)
1 (12-16 oz) skirt of flank steak (we only used chicken)

The rest of the ingredients I used:
1 tbsp canola oil (I used EVOO)
1 red bell pepper, sliced
1 green bell pepper, sliced
2 onions, sliced (I only used one)

Marinade:
In a small bowl, combine all the marinade ingredients (which ever you choose to use). Pour the mixture into a 1 gallon-size resealable bag. Add the chicken (and other meat you want) tothe bag. Cook This! says to marinate for and hour. Giada says to do 4 hours. I did it over night.

Put a grill pan over medium-high heat (we used a george forman haha). Obviously remove the chicken from the bag and place on grill. (SAVE THE MARINADE per Giada) Grill the chicken 6-8 minutes on each side or until center is no longer pink.



In a separate pan add oil, onions, and bell peppers. Cook until charred and carmelized (about 10 minutes)



In a sauce pan add the left over marinade and simmer for 5 minutes until it slightly thickens.


Add chicken, veggies, and marinade. Toss. Enjoy with warm corn tortillas, sour cream, and whatever else you want!



Cook this! Not that! damage: 490 calories. 19 g fat (3.5 saturated) 900 mg sodium.

Giada damage? Unknown, but who cares! I combined the recipes and it was the bomb.

White Chili

This recipe is for my mother-in-law and my sisters.

1 lbs boneless skinless chicken breasts cubed
1 medium onion chopped (I use red)
1 1/2 tsp garlic powder
1 tbsp vegetable oil (I use EVOO)
2 - 15 oz cans great northern beans, rinsed and drained (you can also use white beans)
1 14.5 oz can chicken broth
2 - 4 oz cans chopped green chilies
1 tsp ground cumin
1/2 tsp pepper (fresh ground is best)
1 tsp dried oregano
1/4 tsp cayenne pepper
1 cup sour cream (8 oz)
1/2 cup whipping cream

In a large sauce pan saute chicken, onion, and garlic powder in oil until chilcken is no longer pink. Add beans, chilies, and seasonings. Bril to a boil. Reduce heat and simmer uncovered for 30 minutes. Remove from heat. Add cream and sour cream just before serving...


MMMMMM MMMMM! Its SOOO good. I usually make a side of corn bread. I made this on Sunday and I forgot to take pics. Sorry. Trust me though its amazing!

Today. Was. Nuts. AKA my pitty party day

Trying to get your tooth fixed and going to the lawyer and cooking dinner and being a wife makes for a nutty day. Especially when the dentist has you come in to the office just to poke around on your broken tooth and tells you to come back when he has time to numb you. This = 2 drives in to work so far for the day. Then I left around 1 to go the the lawyer's office. This took a little longer than expected so I didn't get back to work until almost 3:30. Drive to work #3 for the day. Sheesh. This meant NO workout and basically soft food for the next couple days until my tooth gets fix.  Good things about this Monday? Hubby :-) As always!

He cleaned up from dinner, got me a Jamba Juice, and gave me some much needed listening time and love. I am the luckist girl. Ever.

China Peak

Guess where we went yesterday? K well I already told you but we went to the SNOW!
In case you didin't know... Devin is into skiing... and I board.... Oh yeah.


We joke that our children will have to decide who they "love" more... AKA do they want to skii or boad? Actually I want our chillens to skii. Its more refined I think.



It was a GORGEOUS day! It was seriously hot there I wanted to put on my bathing suit. K maybe not that hot but still.



I went to snow school (haha) and I learned how to link my turns! BOO YAH! I was doing so dang good and then BAM! I had a super hard fall on my boo-tay and hurt my hip really bad. I didn't go up anymore...



I DID go hang out at the lodge while hubby demo'd some super sweet 2012 solomon skiis. There was this girl there and I immediately knew we would be friends. How? Because 1. We have the same UGG boot. 2. She had a STACK of US Weekly. 3. She was wearing PINK. Kindered no? :-) She let me read her magazines and we talked shoes until Devin found me.



I REALLY want to go back in a few weeks before the snow melts because I was bomb before I bombed. Just need to let my hip repair.
All in all it was a fabulous weekend get away. Even though I broke my tooth (YIKES!) before we got there and I got hurt I want to go back RIGHT NOW :-)

And I wish I did awkward's and awesome's on Sundays right now because I have some good ones from the trip but you will just have to wait... Muah hahaha (that was an evil laugh... kinda)
