Zucchini Carbonara

Another fab cook this! not that! recipe!

You'll need:
10 oz spaghetti
6 strips bacon cute into 1/2'' pieces
1 medium yellow onion, diced
1 large zucchini, sliced into ribbons
2 cloves garlic, sliced
Salt and pepper to taste
2 large egg
1 handful chopped fresh parsley

How to make it:
Bring pot of salted water to a boil. Add pasta and cook until al dente.
While pasta cooks heat a large saute pan over medium. Add the baconand cok until crispy (5 mintues). Transfer bacon to a plate lined with paper towels. Discard all except a thin film of the bacon fat from the pan. Add the onion, zucchini, and garlic to pan and cook for about 7 minutes until soft and lightly browned. Stir back in the bacon and season with salt and pepper. Drain pasta and use a coffee cup to save a few ounces of the water from the pasta. Add the pasta directly to the saute pan and toss to coat. Stir in enough of the pasta water so that a thin layer of moisture clings to noodles. Remove from heat and crack the 2 eggs directly into the pasta using tongs of forks to toss for even distribution. Divid pasta among bowls and top with cheese and parsley.

The damage: 370 calories, 8 g fat (3 g saturated) 960 mg sodium

Yum yum yum! Devin loved this! But he likes everything I make :-) I thought this dish was "ok"... I probably would have liked it more if I hadn't had zucchini with my lunch. Happy eating!
