Steak: w/ Blue Cheese Crust

Hello friends! Another Cook this! Not that recipe! Devin made this one all by himself :-) So I don't have pictures from the process.

You'll Need:

1/2 cup bread crumbs ( I used panko)
1/4 cup blue cheese
2 tbsp fresh parsely (chopped)
1 tsp chopped fresh rosemary (or thyme)
1 tbsp olive oil
4 sirloin or tenderloin steaks (4-8 oz each)
Salt and pepper to taste

How to make it:
-Preheat oven to 450. Combine bread crumbs, cheese, parsley, and rosemary in a bowl and set aside.
-Heat the oil in a large skillet (or grill pan) over high heat. Season the steaks with salt and pepper. Sear the first side of the meat for 2 minutes or until well browned.
-Flip the steaks and top each with a quarter of the cheese mixture. Gently press cheese mixture into the meat. Transfer steaks to the oven to finish cooking. (We put the skillet in the oven and it worked fine but you can use a baking sheet too). The steaks will cook for about 5-6 mintues in the oven before they are done. They need to feel firm but still "springy". The bread crumbs should have browned nicely and formed a good crust on top. Let the steaks rest for a few minutes before serving. This is so the juices stay in the steak!

The Damage:
330 calories, 17 g fat, 6 g saturated fat, and 600 mg sodium

How I felt about this dish:
Devin LOVED it :-) (of course haha) I thought it was good, I am not a huge fan of blue cheese so for a blue cheese dish I liked it :-)

Obviously we added brown rice and corn ;-) So our meal wasn't purely 330 calories but thats OK! Can you see Lucy just DYING to have some!? Hehe!
