Sometimes I forget...

Today was simply madness at work. I don't think I sat down for more than a few mintues the entire day. I left work later than usual and I still got home before Devin did. I made dinner (home made BBQ chicken pizza!) and finally around 7 I made it upstairs to change out of my scrubs. This is what I found on our bed...

My hubby's cap that he wore to work today just sititn' on our bed. It made me stop and forget all that I had done and all that I still needed to do. Today admist my craziness I had a moment of pure gratitude for the man that my husband is, for how hard he works everyday and how amazing he is. I am so fortunate that he is still HERE with me and not oversea's away from me. I am thankful for all those that serve in the military and all their families... especially mine.

My very first outfit post!

 How cute is the Laundry Room sign? Hubs gave it to me for Christmas :-) Anyway! The point is, we had TONS of laundry to do this weekend which left me room to get a little creative with my outfit choices... Sunday's are my day to dress up becuase during the week. I am wearing scrubs

And today I did the unthinkable (for me). I wore my hair in a pony tail! (Gasp!)
 But I figured that star's do them with fancy dresses to award shows... so I found it perfectly acceptable to wear one to Stake Conference.

This weekend....

We had been playfully arguing over who would get to wear our "new" buffalo exchange T-shirt. I have no idea why, but we both like it and wanted to wear it on the same day. Guess who won? :-)

During our travels we went to Firestone grill. Honestly that place should be on Diner's Drive-in's and Dives or something. It is THAT GOOD. I could see all the really skinny girls looking at me thinking "she really should be eating a salad" but you know what? I ate EVERY BIT of that burger and it was WORTH IT!

I love this man. This is us at the beach yesterday.

Blueberry Pancakes!

Pancakes are a weekend breakfast staple around the Zufelt home. And I have a confesson: I really don't like plain pancakes. I can't STAND them! I HAVE to have "fancy" pancakes if you will. I usually make chocolatechip pancakes or blueberry pancakes and I have even make pumpkin pancakes! So last night when we were at Wally world (aka Walmart gross I know but Target is even worse right now) I saw a NEW cook this not that book! Needless to say I had to buy it (because I was HUNGRY!) and the first thing that caught my eye? Blueberry Pancakes of course! So we rushed home and made them right away!

You'll need:
2 cups frozen wild blueberries
1/2 cup water
1/4 cup sugar
1 cup plain Greek-style yogurt (We used Fage 0%)
3 eggs
1 cup low-fat cottage cheese or ricotta (we used ricotta)
Juice of 1 lemon
1 cup flour (we used whole wheat)
1/2 tsp baking soda
Pinch of salt

How to make it:
-Mix the blueberries, water, and sugar in a saucepan. Cook over low heat, stirring frequently for about 10 minutes of until the blueberries begin to break apart.
-Whisk together the yogurt, cheese, eggs, and lemon juice in a bowl.
-Mix the flour, baking soda, and salt in another bowl and add the flour to the yogurt mixture and stir until blended
-Heat a large skillet over medium-low and coat with nonstick spray (we used olive oil). Add batter in large spoonfuls (about 1/4 cup). Flip the pancakes over when the tops begin to bubble (about 3-5 minutes) and cook the second side until browned.
-Serve with warm blueberries!

These are now Devin's favorite pancakes! They were moist and fabulous! Honestly I am a pancake SNOB and I am IN LOVE with these!!!

Oooh I almost forgot! Damage: 310 calories, 8 g fat (3.5 g saturated), 500 mg sodium

Steak: w/ Blue Cheese Crust

Hello friends! Another Cook this! Not that recipe! Devin made this one all by himself :-) So I don't have pictures from the process.

You'll Need:

1/2 cup bread crumbs ( I used panko)
1/4 cup blue cheese
2 tbsp fresh parsely (chopped)
1 tsp chopped fresh rosemary (or thyme)
1 tbsp olive oil
4 sirloin or tenderloin steaks (4-8 oz each)
Salt and pepper to taste

How to make it:
-Preheat oven to 450. Combine bread crumbs, cheese, parsley, and rosemary in a bowl and set aside.
-Heat the oil in a large skillet (or grill pan) over high heat. Season the steaks with salt and pepper. Sear the first side of the meat for 2 minutes or until well browned.
-Flip the steaks and top each with a quarter of the cheese mixture. Gently press cheese mixture into the meat. Transfer steaks to the oven to finish cooking. (We put the skillet in the oven and it worked fine but you can use a baking sheet too). The steaks will cook for about 5-6 mintues in the oven before they are done. They need to feel firm but still "springy". The bread crumbs should have browned nicely and formed a good crust on top. Let the steaks rest for a few minutes before serving. This is so the juices stay in the steak!

The Damage:
330 calories, 17 g fat, 6 g saturated fat, and 600 mg sodium

How I felt about this dish:
Devin LOVED it :-) (of course haha) I thought it was good, I am not a huge fan of blue cheese so for a blue cheese dish I liked it :-)

Obviously we added brown rice and corn ;-) So our meal wasn't purely 330 calories but thats OK! Can you see Lucy just DYING to have some!? Hehe!

Awkward and Awesome


-Lucy letting a "silent but deadly" one RIP during my visiting teacher is bearing her testimony... Um excuse while I let my gassy dog out
-Having a provider at work asking me if we have a PANIC button!?!? Um... NO!
-Having patients who are like 60396 years old telling me that my husband is handsome. I mean I KNOW he is but still
-Sneezing on the phone

Sorry those were kind of lame- promise next week I will have better ones. But my awesomes are AWESOME!

-Tomorrow it will offically be 1 month until my birthday!
-Devin got his new ski boots and they are super cool ;-)
-The enchiladas we had for dinner tonight!
-P90X- summer here we come!
-Getting letters in the mail from my best friend!!!! (She is in Florida serving a full time LDS mission)
-I get to wear NEW CLOTHES tomorrow!!!
-And as always TOMORROW IS FRIDAY!
-Oh and I don't have to teach a Sunday school lesson this week! WHOOT!

We aren't going skiing this weekend but we will be celebrating Lucy's birthday at the beach with friends! OH and ANOTHER awesome is that tomorrow I am going to go do the Bob Jones trail with my friend Heather! I haven't seen her in years and I am super excited to meet her little peanut Parker! Now if you would excuse me I am going to go do P90X with the hubs ;-)

We went here
And had an amazing morning! I love the peace the temple brings. Seriously I cannot say enough about how much I love the temple and going there with my hubs.

Then we ate lunch here

And it was delicious! Devin had curry and I had the Pad Thai. The service sucked but the food was worth it. THEN we went for dessert at one of my favorite spots!!!!!

Yup... Diddy Riese ice cream cookie sandwiches! Seriously the $1.50 price tag makes them even more amazing! I ALWAYS get chocolate chip cookies with chocolate ice cream. This time Devin got double chocolate cookie with butter pecan ice cream.
THEN we went on a hunt in Camarillo for the Vera Bradley store... and it was quite the adventure because our GPS took us to someone's house.... but we found it eventually. :-)

THEN we went to the Camarillo Outlets. Seriously it is da bomb. We went to the coach store and I got to go to J. Crew. And those are my most favorite stores EVER.

I got some seriously cute stuff for an amazing price! Thank you J. Crew for making cute modest clothing!

THEN we went to buffalo exchange to try and sell some of our old stuff. They only took 4 things and we brought them a whole tub full! Sheesh thanks for telling me my clothes suck haha oh well its not like I want them anymore.

At this point we were both tired and just wanted to go home. So we left the city and came home to pick up our girl from the Grandparents. And she is super cute.

In my family we celebrate birthday MONTHS and I am soo excited for mine! My family always makes it so special! The entire month of February is going to be amazing! Zucchini Carbonara

Another fab cook this! not that! recipe!

You'll need:
10 oz spaghetti
6 strips bacon cute into 1/2'' pieces
1 medium yellow onion, diced
1 large zucchini, sliced into ribbons
2 cloves garlic, sliced
Salt and pepper to taste
2 large egg
1 handful chopped fresh parsley

How to make it:
Bring pot of salted water to a boil. Add pasta and cook until al dente.
While pasta cooks heat a large saute pan over medium. Add the baconand cok until crispy (5 mintues). Transfer bacon to a plate lined with paper towels. Discard all except a thin film of the bacon fat from the pan. Add the onion, zucchini, and garlic to pan and cook for about 7 minutes until soft and lightly browned. Stir back in the bacon and season with salt and pepper. Drain pasta and use a coffee cup to save a few ounces of the water from the pasta. Add the pasta directly to the saute pan and toss to coat. Stir in enough of the pasta water so that a thin layer of moisture clings to noodles. Remove from heat and crack the 2 eggs directly into the pasta using tongs of forks to toss for even distribution. Divid pasta among bowls and top with cheese and parsley.

The damage: 370 calories, 8 g fat (3 g saturated) 960 mg sodium

Yum yum yum! Devin loved this! But he likes everything I make :-) I thought this dish was "ok"... I probably would have liked it more if I hadn't had zucchini with my lunch. Happy eating!

Awkward and Awesome

Okay so I was supposed to do this YESTERDAY but obviously I didn't so here it goes....

-Stinky people. Especially when these people are in a small confined room in the gym. I mean I know its the gym... but REALLY!?
-Telling your boss you want to give your two weeks notice... so I really like working here its just that... um...
-Walking into the bathroom when someone is doing their... business
-Fat dogs. I swear she is just big boned
- Running into the wall almost EVERYDAY at work. I have what I like to call bad "spacial" awareness
-Stretching with people at the gym. It gives me the giggles
-People on base calling Devin "sir"... Do I have to call you sir too?

-My sister came to visit and we ate at Natural Cafe
-My BIRTHDAY is coming!
-Going to the temple tomorrow
-Devin's LAUNCH!!! Ah it was seriously SO amazing I was such a proud wife and I still am! Check it out here
-When I had a bad day my lovey said "bug lets buy you some shoes ok? shoes and chocolate? does that sound good?" gosh I love him :-)

We are going to LA

This weekend to go to the temple :-) I love these days. I feel like it brings hubs and I so much closer as a couple and we have so much fun being together! What I ALSO love about going down to LA this weekend is that I get a chance to use these beauties....

Vera Bradley mod floral pink! I have been collecting these for years haha! We finally finished off my collection (what I wanted from it atleast) at Christmas! I believe in cute travel bags :-) Devin will be so excited to come home and see that I am using them! Oh and I appologize for the first picture and all the floral.

Bummin' out

Today I am for sure PMSing... straight up all I want is a burger, fries and chocolate. I swear the full moon plus my hormones are not a good combo. I'm grumpy, tired and my job is sucking the life out of me. (pitty party for sure). However, on a happier note my hubs came home early, he has his launch tomorrow (biggest one yet at Vandenberg!) we are having dinner with my fam tonight, and my doggy is cute. Lots of fun blogs coming your way soon when my mood improves.

Awkward and Awesome

I am introducing a new section of my blog called "awkward and awesome" that I stole from TheDayBook but I don't think she would mind :-) It is "traditionally" done on Thursdays... wish me luck on my first akward and awesome blog.

-First of all, the word AWKWARD just puts me in an awkward mood.
-A velvet covered car (seriously I saw one today)
-"fluffy" girls working at the gym front desk
- Some girl at work telling me that her "scrotum" is itching... Sex ed anyone?
-When patients call at work and say "This is so and so can I speak to someone" um... you already ARE.
-Pampered chef parties, or any product party for that matter. Don't go unless you plan on buying because if you don't... SUPER awkward
- Teaching teenagers in Sunday school about the law of chastity... because 14 year old boys are really 5 year olds
-Answering my cell phone "San Luis Internal Medicine"
-Carrying a Tree (yes a real 4 foot tall tree) to my car with my other 29893 bags that I take to work
-The Allstate "Mayhem" comercials... seriously who IS that guy?

- Chocolate face masks... seriously TRY IT!
-Getting my passport!!!!!!!!!
-Kick butt workouts (Summer here I come!)
-Browsing the Vickie Secret Swim website with Brands haha sounds awkward but really its awesome
-My dinner that is cooking right now (shredded chicked tacos!)
-Hubby giving me a massage mmmhmmm its nice
-Celebrating birthday "months" and not birthDAYs
-Disneyland.... its my happy place
-The Biggest Loser.... nothing makes me want to get up and MOVE like that show does
-My sister is coming to visit next week!

I hope I did ok for my first first! More to come I hope! OOOO I have one more awesome!!! TOMORROW IS FRIDAY!!!!!

"It sounds like rat patutie!" If you have never seen this Disney film shame on you! Its one of my favorites! In fact Devin calls me "little chef" :-) But last night my hubs made me Grilled Ratatouille Salad (with grilled chicken) from our Cook This! Not That! book. Yesterday I stayed in San Luis longer to go to a body sculpting class with my friend Brandee. And when I got home my hubs had this all ready for me! I think I will keep him ;-)

You'll need
1 large red onion cute into 1/4'' slices
1 red bell pepper, quatered (seeded and stems removed)
1 medium eggplant (honestly I did not enjoy the eggplant next time its a no go)
1 large portobello mushroom cap cut 1/4'' thick slices
1 large succhini 1/4'' slices
2 medium yellow squash 1/4'' planks (we only used one)
12-16 asparagus stalks, woody ends removed
4 tbsp oliveoil
salt and pepper to taste
1 tbsp pesto
2 tbsp red wine vinegar
2 tbsp pine nuts toasted (we did without these)
1/4 cup grated parmesan

How to make it:
- Preheat grill. Toss the veggies with 2 tbsp olive oil and season with salt and pepper. Grill until cooked through and lightly charred removing each veggie when it reaches this stage. Some veggies take longer than others (like the asparagus and squash)
-Combine pesto and vinegar in a small bowl and add 2 tbsp olive oil. Cut the red pepper into thing slices and toss all veggies with vinaigrette and parmesan.

It was sooo good! Just what I needed after a double workout day. Devin also grilled up some chicken and added that to the salad to give us some protein.

Family Home Evening

So Monday night, while my husband and Dad watched football my mom and I did this...

Hahaha! This is a chocolate mask from LUSH :-D It is called cupcake. My mom thought we were so funny! We ALSO make Banana-Nutella crepes from Cook This! Not That!

Butter for crepes
1/2 crepe batter recip
Crepe Batter: 1 cup flour 2 large eggs 2 tbsp melted butter
1/4 cup nutella
2 bananas peeled and sliced
Confectioner's sugar (optional)

How to make it:
-Heat a 10'' nonstick pan over medium heat. Add enough buterr to coat. Then add 2 tablespoons of the crepe batter and swirl the pan to cover it evenly.
- Cook side #1 for 3-4 mintues or until the bottom is golden brown. Flip and add tbsp of nutella down the middle of the crepe, top with banana slices (I did about 5-6 slices for each).
- Cook 3-4 minutes longer on side #2 until golden brown. Fold the crepe over the filling and slip onto a plate. ( I folded mine into 4th's) Top with more bananas or powered sugar if you want!

My mom doesn't like Nutella (GASP!) so I made her a peanutbutter and banana one (top picture) but you can basically add whatever you want! Seriously I could not make these fast enough! I did a whole crepe batter batch (it made 4) and Devin and my mom kept devouring them!

Damage done: 260 calories, 12 g Fat (only 5 saturatd) and 18 grams sugar
